Sue & Trey's "Between Me and My Mouth" Vegetarian Chili
Serves 4-6
Ingredients
1 tablespoon olive oil
1 onion chopped
3 cloves garlic minced
1 carrot peeled and chopped
1 celery stalk chopped
1 red pepper chopped
1 yellow pepper chopped
1 jalapeño diced, seeds removed
3 15 oz. cans diced tomatoes
2 15 oz. cans red kidney beans, rinsed and drained
2 15 oz. cans black beans, rinsed and drained
2 cups water
1 1/2 tablespoons cumin
2 tablespoons chili powder
Salt and pepper to taste
Shredded cheese (cheddar or jack)
Instructions
In a large pot, heat olive oil over medium heat. Add onion and cook until tender, about 5 minutes. Add garlic and cook until light brown, about 2-3 minutes. Add carrot, celery, peppers, and jalapeño Cook for five minutes, or until vegetables are soft.
Stir in diced tomatoes, beans, and water. Season chili with cumin, chili powder, salt, and pepper. Stir and let chili simmer for 30 minutes. Stir chili frequently so it doesn't stick to the bottom of the pan. Serve hot. Shred cheese on top. Serve with chips or cornbread. This chili also freezes beautifully.

I've been getting bad picture quality from YouTube for these Tuesday streams. So I switched to the Facebook feed, going into my TV via a laptop. Better pic but FB's fullscreen view leaves the controls and progress bar perpetually on-screen, which strikes me as a pretty elementary error.
Am I missing something? Am I doomed to look at this stuff all night, perhaps until COVID itself comes to an end, weeks or years from now?

I've been watching them on Wednesday mornings. The wife is still working from home, so I go to bed with her, but wake up a lot earlier (I require much less sleep than she does). I brew some coffee and head to the Batcave where I can watch them with a nice wake'n'bake to get my day started.

SO glad to have them again (and in a size my ~40 year old ass can wear). I was actually looking around on ebay for that exact shirt a few weeks ago, the one with the tickets on the back.. I found one but it was way too small.

Sunday: I'd start with Sierra Hull and leave it on. Do NOT sleep on The Bluegrass Congress. We watched it from the side of the stage (it was pouring rain) and holy shit. It's terrific.

Yeah, it's some great footage. Some of the green screen stuff can get a little tiresome but they said they have reworked some of the video and audio quality for this so I am stoked to check it out. got sucked into twitter pretty hard over the long boring summer. i've never been a social media guy, so it was weird. haven't checked it in 3 weeks and it's been great. it's a useful tool for getting info from bands and reaching out to people that may help you in life that you'd normally never be able to get in touch with, but, for me, it's not a place to hang.
Maybe an unpopular opinion, but I think it kinda makes sense. I can muster a lot more excitement for a once-a-month thing spread over the weekend than I can for a weekly Tuesday night thing.
A bunch of my extended family have had a weekly chat going Saturday nights since the end of March, which has been great, but we're switching to monthly now.
